Ingredients
1 pack Rice Paper wrappers
1/2 cup shredded iceberg lettuce
100g bean shoots
1 small carrot, peeled and grated
1 medium Lebanese cucumber, peeled, cut into long thin sticks
2 medium avocadoes, peeled and cut into sliced
15-20 sprigs fresh coriander
2 cups cooked rice vermicelli
tar10's Kaffir Lime Dressing
1 fresh chilli for garnish
Method
- Pour warm water into deep dish (2-3cm depth)
- Dip rice paper wrapper in water and place on a damp tea towel. Stand for 20-30 seconds or until soft enough to roll
- Place equal quantities of ingredients onto rice paper rolls ensuring rolls aren't overfilled
- Fold in ends and roll up, enclosing filling
- Cover with a damp tea towel to prevent drying out. Repeat with remaining rice paper wrappers
- Serve with tar10 Kaffir Lime Dressing, garnished with fresh chillies and coriander.Â
