Ingredients
1 can of drained and rinsed Chickpeas
1 cup uncooked Quinoa
2 cups Water
1 medium Cucumber finely chopped
1 medium Red Capsicum, finely chopped
1 cup finely shopped Red Onion
2 medium finely chopped Tomatoes
1 cup of finely chopped flat Parsley
150g canned Corn Kernels
100mls tar10 Traditional French Vinaigrette
Method
- Rinse Quinoa and place in a small saucepan with water
- Bring to the boil, then simmer gently until water is evaporated
- Fork up to break up the grains
- In a large bowl, add all other ingredients
- Mix well and toss through
- Add salt and pepper to taste
